SLOW-COOKER GAMMON SOUP

A hearty, wholesome soup that’s pure comfort in a bowl. Slow-cooked gammon, tender veggies, and sweet peas all come together in a rich, creamy broth.
The kind of meal that warms you from the inside out, perfect for cold days.

Ingredients
750g smoked gammon joint
2 sticks celery, roughly chopped
2 medium carrots, roughly chopped
1 onion, roughly chopped
1 large potato, roughly chopped
1 tbsp dried thyme
400g frozen peas
1L chicken stock
Double cream (optional)
Method
Add the gammon joint, thyme, and a small pinch of salt to the slow cooker (go easy on the salt, gammon can be quite salty). Add the celery, carrots, onion, and potato, then pour in the chicken stock. Cook on low for around 8 hours, or until the gammon is pull-apart tender.
Remove the gammon from the slow cooker and set aside. Add 300g of the peas to the soup, and once the peas have warmed through, blitz the soup until smooth. If it’s too thick, add a splash of water.
Shred the gammon and return it to the soup, along with the remaining peas. Stir through a splash of double cream (if using), check for seasoning, and warm everything through.
Serve up with an extra drizzle of cream and a little extra virgin olive oil on top.
