TZATZIKI
One of my all-time favourite dips (or sauces… I’m never quite sure what to call it!). It’s fresh, creamy, garlicky and packed with flavour. It’s just as good with a warm pitta for dipping as it is drizzled over homemade kebabs like we did tonight. And before anybody calls the Greek police… 🇬🇷👮😂 I know this should be made with proper Greek yoghurt, but I couldn’t get any, so I used Greek-style yoghurt instead. SPANISH LEMON CHICKEN
A proper one-pan dinner that’s packed with flavour but couldn’t be easier to make. The lemon keeps everything fresh, while the wine, herbs and buttery sauce are perfect for mopping up with a chunk of bread. TORTELLONI, TOMATO & PESTO SOUP
Not entirely sure what possessed me to make soup in 32°C weather… but here we are. 😂 I had a courgette and some pesto left over from my Pesto Gnocchi Tray Bake https://www.instagram.com/reel/DZ73FGvooLw/?igsh=MWwxdTQzb2I1Z2lqMQ== , so rather than let them go to waste, they became this. Smoky pancetta, sweet tomatoes, garlic, pesto and cheesy tortelloni all brought together in one pot. I actually let it cool slightly before eating and, surprisingly, it was really refreshing,
